A quick and flavorful weeknight dinner featuring tender salmon baked with garlic butter alongside crisp roasted asparagus. Simple ingredients come together for a satisfying and healthy meal.

Ingredients

Scale
  • 4 salmon fillets, skin-on preferred (about 6 ounces / 170 grams each)
  • 1 bunch asparagus (about 1 pound / 450 grams), trimmed
  • 4 tablespoons unsalted butter (about 60 grams), melted
  • 3 cloves garlic, minced
  • 1 medium lemon, juiced and zested
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the asparagus and trim the woody ends (about 1-2 inches). Pat dry and toss with olive oil, a pinch of salt, and black pepper. Spread evenly on one side of a parchment-lined baking sheet.
  3. In a small bowl, combine melted butter, minced garlic, lemon juice, and lemon zest. Stir well. Add red pepper flakes if desired.
  4. Pat the salmon fillets dry with paper towels. Place skin-side down on the other side of the baking sheet, leaving space between fillets.
  5. Brush the garlic butter generously over the salmon fillets, reserving some for after baking.
  6. Season salmon with salt and pepper. Sprinkle chopped parsley on top if using.
  7. Bake for 12-15 minutes until salmon is opaque and flakes easily, and asparagus is tender but crisp. Add a few extra minutes if fillets are thicker than 1 inch.
  8. Remove from oven and drizzle reserved garlic butter over salmon and asparagus. Let rest for 1-2 minutes before serving.

Notes

For crispy salmon skin, broil for the last 1-2 minutes but watch carefully to avoid burning. Do not overcrowd the pan to ensure even roasting. Use ghee or dairy-free butter alternatives for a dairy-free version. Swap asparagus with green beans, broccolini, or zucchini if desired. Leftovers keep well for up to 2 days refrigerated; reheat gently in the oven.
