A quick and easy cinnamon roll casserole that delivers gooey, caramelized cinnamon goodness topped with luscious cream cheese icing. Perfect for a cozy homemade breakfast or brunch without the fuss of rolling dough.

Ingredients

Scale
  • 12 pre-made cinnamon rolls (classic or with icing)
  • 3 tablespoons butter, melted
  • ½ cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 23 tablespoons milk (whole, 2%, or dairy-free)
  • Optional: pinch of salt for icing

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch casserole dish with butter or non-stick spray.
  2. Unroll or cut the cinnamon rolls into halves or quarters. Arrange the pieces evenly in the casserole dish, leaving small gaps.
  3. In a small bowl, mix melted butter, brown sugar, and ground cinnamon until combined. Spread this cinnamon sugar mixture evenly over the cinnamon roll pieces.
  4. Bake the casserole for 25 to 30 minutes until edges are golden brown and crispy, and the center is soft and gooey. Cover loosely with foil if the top browns too fast.
  5. While baking, beat together softened cream cheese, powdered sugar, vanilla extract, and milk until smooth and drizzleable.
  6. Remove casserole from oven and let cool for about 5 minutes to set.
  7. Drizzle the cream cheese icing generously over the warm casserole.
  8. Serve warm or at room temperature.

Notes

Use room temperature cream cheese for smooth icing. Let casserole rest 5 minutes after baking to set gooey layers. If baking from refrigerated casserole, add 5 extra minutes. Watch oven temperature to avoid burning edges. Optional add-ins include berries, nuts, or chocolate chips.
