  • 3 oz sharp aged cheddar cheese
  • 4 oz prosciutto slices (thinly sliced)
  • 3 oz soppressata or spicy pepperoni
  • Small bunch seedless green grapes, washed and dried
  • ½ cup mixed olives (pitted; Kalamata and Castelvetrano preferred)
  • ¼ cup pickled cornichons or baby dill pickles
  • About 20 artisan crackers (e.g., Waterthins Multigrain)
  • Small handful toasted almonds or Marcona almonds, roughly chopped
  • 1 tablespoon honeycomb or local honey
  • Fresh rosemary sprigs (for garnish and aroma)

Instructions

  1. Slice the Manchego and cheddar into thin wedges or cubes about ¼ inch thick. Cut the Brie into small wedges, leaving the rind intact. Arrange cheeses spaced out on the board. (5 minutes)
  2. Gently fold or roll the prosciutto slices into loose ribbons. Slice the soppressata into thin rounds or half-moons. Distribute evenly around the cheeses. (5 minutes)
  3. Place grapes in small clusters for easy snacking. Fill ramekins with olives and pickles, nestling them near the meats. (3 minutes)
  4. Fan out artisan crackers along one side of the board, filling gaps with toasted almonds. (2 minutes)
  5. Drizzle honey over the Brie or place a small piece of honeycomb nearby. Garnish with fresh rosemary sprigs. (2 minutes)
  6. Check for empty spots and fill with extra grapes or nuts to create a full, inviting look. Serve immediately or cover loosely if preparing ahead. (1 minute)

Notes

Take cheeses out of the fridge 30 minutes before serving to enhance flavor and texture. Add crackers and honey just before serving to prevent sogginess. Rinse olives and pickles lightly if too briny.
