Easy Grilled Peach and Burrata Salad with Honey

A simple yet elegant summer salad featuring warm, caramelized grilled peaches paired with creamy burrata, fresh arugula, and a sweet honey-balsamic dressing. Ready in just 20 minutes, it’s perfect for weeknight dinners or summer entertaining.

  • 4 medium ripe but firm peaches
  • 8 ounces burrata cheese (2 small balls)
  • 3 tablespoons honey, divided
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons balsamic vinegar
  • 1012 large fresh basil leaves
  • 4 cups arugula or mixed greens
  • Salt and black pepper to taste
  • Optional: toasted pine nuts or walnuts, balsamic glaze, prosciutto

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400-450°F) for 10 minutes.
  2. Wash and dry peaches, cut in half around the pit, twist to separate, and remove the pit. Leave the skin on.
  3. In a small bowl, whisk together 1 tablespoon honey, 1 tablespoon olive oil, and a pinch of salt. Brush this mixture onto the cut sides of the peach halves.
  4. Place peaches cut-side down on the hot grill. Cook undisturbed for 3-4 minutes until grill marks form. Flip and cook for another 2-3 minutes until slightly softened but still holding shape.
  5. While peaches grill, make the dressing: whisk together remaining 2 tablespoons olive oil, 2 tablespoons balsamic vinegar, 1 tablespoon honey, and a pinch of salt and pepper.
  6. Spread arugula or mixed greens on a large serving platter. Drizzle about half the dressing over the greens and toss gently.
  7. Arrange grilled peach halves on top of greens, cut-side up. Tear burrata into large pieces and nestle among the peaches.
  8. Drizzle remaining dressing over everything. Tear basil leaves and scatter on top. Add a final drizzle of honey, flaky sea salt, and cracked black pepper. Serve immediately.

Notes

Let burrata come to room temperature for 20 minutes before serving for best texture. Don’t overcrowd the grill—peaches should caramelize, not steam. Assemble salad right before serving to prevent wilting. For vegan option, substitute burrata with cashew ricotta and use maple syrup instead of honey.
