Easy Hidden Veggie Turkey Pinwheels

These turkey pinwheels sneak in finely grated vegetables for a nutritious, kid-friendly snack or meal that’s quick and easy to prepare.

  • 8 ounces lean ground turkey (93% lean)
  • 1 cup shredded mozzarella cheese
  • 1 small zucchini, finely grated (excess water squeezed out)
  • 1 medium carrot, finely grated
  • ½ cup finely chopped spinach (fresh or frozen, thawed and drained)
  • 2 cloves garlic, minced
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Finely grate the zucchini and carrot using a box grater or food processor. Squeeze out excess moisture from the zucchini. Chop the spinach finely if fresh, or thaw and drain if frozen. (About 10 minutes)
  2. Heat olive oil in a non-stick skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add ground turkey, breaking it apart, and cook for 5-7 minutes until browned and no longer pink.
  3. Stir in grated zucchini, carrot, and spinach. Cook for another 3-4 minutes until veggies soften. Season with salt, pepper, and Italian seasoning. Let mixture cool slightly. (Total cooking time about 12 minutes)
  4. Transfer turkey and veggie mixture to a mixing bowl. Add softened cream cheese and half of the shredded mozzarella. Stir thoroughly until evenly combined. (About 5 minutes)
  5. Lay a tortilla flat on a clean surface. Spread about ¼ to ⅓ cup of the turkey-veggie mixture evenly over the tortilla, leaving a small border around edges. Sprinkle with remaining shredded mozzarella.
  6. Roll the tortilla tightly from one edge to the other to form a log. Use a sharp knife to slice into 1-inch pinwheels, yielding 8-10 pinwheels per tortilla. (Assembly takes 10-15 minutes)
  7. Arrange pinwheels on a plate for serving or store in an airtight container in the fridge. Reheat briefly in microwave or oven if desired.

Notes

Squeeze zucchini well to avoid sogginess. Use softened cream cheese to bind filling. Roll tortillas tightly but gently to prevent pinwheels from falling apart. If mixture is too wet, add breadcrumbs; if too dry, add milk or extra cream cheese. Pinwheels can be made ahead and stored in fridge for up to 3 days or frozen for up to 1 month.
