Ingredients

Scale
  • 4 large flour tortillas (burrito-sized; whole wheat or spinach for extra fiber)
  • 8 ounces deli turkey breast (preferably Boar’s Head or Applegate)
  • 4 slices cheddar cheese (or provolone, Swiss, or pepper jack)
  • 4 tablespoons cream cheese, softened
  • 1/4 cup baby spinach leaves (optional)
  • 1 cup baby carrots (or carrot sticks, cut into bite-sized pieces)
  • 1 cup grapes (red or green, washed and dried)
  • 1/2 cup cherry tomatoes (optional)
  • 2 tablespoons ranch dressing or hummus (for dipping, optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 10 minutes before starting, or microwave for 10 seconds until spreadable but not melted.
  2. Lay out a tortilla flat on a cutting board. If stiff, microwave for 5 seconds to make pliable.
  3. Spread 1 tablespoon of softened cream cheese evenly over the entire tortilla, leaving a half-inch border around edges.
  4. Place 2 ounces of turkey slices over the cream cheese, overlapping slightly.
  5. Lay one slice of cheddar cheese on top of the turkey. Add a few spinach leaves if using.
  6. Starting from one edge, roll the tortilla tightly, tucking filling in as you go. Place seam-side down.
  7. Wrap each roll tightly in plastic wrap or parchment paper. Refrigerate for at least 10 minutes.
  8. Unwrap chilled rolls and slice into 1-inch thick pieces using a sharp serrated knife with a gentle sawing motion.
  9. Arrange 4-5 pinwheels in one compartment of a bento box or container. Add baby carrots, grapes, and other sides in separate compartments. Include dip in a small leak-proof container if desired.
  10. Seal container and refrigerate until lunchtime. Wraps keep well for up to 4 days.

Notes

Cream cheese layer prevents sogginess. Chilling before slicing is crucial for clean pinwheels. For extra crunch, briefly toast tortilla in a dry pan before assembling. Flavors improve after a day in the fridge. Freeze uncut rolls for up to 1 month.
