Easy Homemade German Soft Pretzel Bites with Beer Cheese Dip

  • 1½ cups warm water (355ml, around 110°F)
  • 2¼ teaspoons active dry yeast (one ¼-ounce packet)
  • 2 tablespoons brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1½ teaspoons fine sea salt
  • 6 cups water (1.4 liters) for baking soda bath
  • ⅓ cup baking soda (75g)
  • Coarse sea salt or pretzel salt for sprinkling
  • 8 ounces sharp cheddar cheese, freshly grated (225g)
  • ¾ cup lager beer (175ml)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • ¼ cup whole milk (60ml)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • Salt and cayenne pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) with brown sugar. Sprinkle yeast over the top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 2 cups of flour, stirring until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  3. First rise: Lightly oil the bowl, place the dough ball in it, and turn to coat. Cover and let rise in a warm spot for 1 hour, or until doubled in size.
  4. Shape the bites: Punch down the dough and divide into 4 equal pieces. Roll each piece into a 12-inch long rope, ¾ inch thick. Cut each rope into 1-inch pieces (about 12-14 per rope). Place on a parchment-lined baking sheet.
  5. Prepare the baking soda bath: Bring 6 cups of water to a rolling boil in a large pot. Carefully add baking soda (it will fizz). Reduce heat to a gentle simmer.
  6. Boil the pretzel bites: Working in batches of 8-10, drop bites into simmering baking soda water. Boil for 20-30 seconds until they puff up and float. Transfer back to baking sheet with a slotted spoon, spacing 1 inch apart. Sprinkle immediately with coarse salt.
  7. Bake: Preheat oven to 425°F (220°C). Bake for 12-15 minutes, rotating pan halfway, until deep golden brown.
  8. Butter them up: Brush hot pretzel bites with melted butter as soon as they come out of the oven. Let cool for 5 minutes before serving.
  9. Make the beer cheese dip: While pretzels bake, melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in beer, whisking constantly. Add milk and whisk until thickened, about 2-3 minutes. Reduce heat to low and add grated cheddar cheese by the handful, stirring until each addition melts. Stir in Dijon mustard, Worcestershire sauce, garlic powder, and cayenne. Taste and add salt if needed. Keep warm over very low heat.

Notes

Don’t skip the proofing time or the baking soda bath. Grate your own cheese for smooth melting. Watch the boil time carefully (20-30 seconds). Keep beer cheese on low heat to prevent separation. For gluten-free, use a high-quality gluten-free flour blend with xanthan gum. For whole wheat, swap half the flour and add an extra tablespoon of water. Freeze unbaked bites for up to 3 months.
