  • 1 cup (200 g) granulated sugar
  • 1 tbsp pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • 1 tsp pure vanilla extract
  • Optional: water to adjust syrup consistency

Instructions

  1. Gather your ingredients: 1 cup pumpkin puree, 1 cup granulated sugar, 1 tbsp pumpkin pie spice, and 1 tsp vanilla extract.
  2. Combine pumpkin puree and sugar in a small saucepan over medium heat. Whisk constantly for 3-4 minutes until sugar dissolves and mixture starts to bubble gently.
  3. Add pumpkin pie spice and whisk to incorporate the spices evenly.
  4. Lower heat to medium-low and let the syrup simmer for 5-7 minutes, stirring often until it thickens to a syrupy consistency that coats the back of a spoon.
  5. Remove from heat and stir in vanilla extract.
  6. Optional: Strain the syrup through a fine mesh sieve into a clean jar for a smoother texture.
  7. Let the syrup cool to room temperature before sealing and refrigerating. It will thicken more as it cools.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Stir frequently during simmering to prevent burning. Store syrup in the refrigerator for up to two weeks.
