Ingredients

  • Chicken breast, boneless and skinless, cut into bite-sized pieces
  • Cherry tomatoes, fresh and firm
  • Mini mozzarella balls (bocconcini), drained
  • Red bell pepper, cut into squares
  • Wooden or bamboo skewers, soaked in water for 30 minutes
  • Sweet corn on the cob, fresh or frozen
  • Mini slider buns, soft and slightly sweet
  • Ground beef or turkey, lean (90% lean ideal)
  • Cheddar cheese slices, mild or sharp
  • Lettuce leaves, washed and dried
  • Pickles, sliced (optional)
  • Honey mustard sauce (equal parts honey and yellow mustard)
  • Plain Greek yogurt (or dairy-free coconut yogurt)
  • Fresh blueberries and strawberries
  • Butter, unsalted and softened
  • Salt and pepper to taste
  • Olive oil (for brushing skewers)
  • Smoked paprika (optional)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Cut chicken breast into roughly 1-inch cubes.
  3. Thread skewers alternating between chicken pieces, cherry tomatoes, mozzarella balls, and red bell pepper squares (4-5 pieces per skewer).
  4. Lightly brush skewers with olive oil and season with salt, pepper, and optional smoked paprika.
  5. Form ground beef or turkey into small patties about 2.5 inches in diameter. Season with salt and pepper.
  6. Heat grill pan over medium-high heat and cook patties for 3-4 minutes per side until fully cooked (internal temperature 160ยฐF). Add cheese slices in the last minute to melt.
  7. Lightly toast slider buns on grill or in toaster oven.
  8. Assemble sliders with lettuce, cooked patty, and pickles inside buns. Keep warm wrapped in foil or in a low oven (200ยฐF).
  9. Grill corn on the cob, turning occasionally until charred spots appear and kernels are tender (about 10-15 minutes), or boil for 8-10 minutes. Brush with softened butter and sprinkle with salt.
  10. Mix honey and mustard together for honey mustard sauce. Set Greek yogurt aside for creamy dip; optionally add lemon zest or garlic powder.
  11. Chop blueberries and strawberries into bite-sized pieces and toss gently for fruit salad. Optionally add chopped fresh mint or drizzle honey.
  12. Grill skewers over medium heat for 10-12 minutes, turning every 3 minutes until chicken reaches 165ยฐF internal temperature.
  13. Arrange skewers, sliders, corn, and fruit salad on festive platters with dipping sauces nearby and serve.

Notes

Soak skewers for at least 30 minutes to prevent burning. Use a meat thermometer to ensure sliders and chicken are cooked properly. Thread skewers in red-white-blue patterns for festive presentation. Sliders and skewers can be prepped ahead and grilled just before serving. Use gluten-free buns and dairy-free yogurt to accommodate dietary restrictions. Leftovers can be refrigerated up to 3 days and reheated in the oven.
