  • 1 large bag (about 13 ounces) restaurant-style tortilla chips (e.g., Tostitos Scoops)

  • 1 cup sour cream
  • 1 cup fresh salsa or pico de gallo
  • 1 cup guacamole
  • 1/2 cup pickled jalapeños, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives, drained
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the Seasoned Beef: Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 2-3 minutes until softened. Add ground beef and cook for 5-6 minutes, breaking it apart, until browned. Drain excess fat if needed. Reduce heat to medium, add garlic, chili powder, cumin, smoked paprika, salt, and pepper.   2. Make the Cheese Sauce: In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in warm milk while whisking continuously. Cook for 2-3 minutes until thickened. Remove from heat and stir in shredded cheddar, mustard powder, and cayenne until smooth. Keep warm on low heat, stirring occasionally.
  3. Prep the Toppings: Drain and rinse black beans. Halve cherry tomatoes. Slice lime into wedges. Chop cilantro. Place each topping (sour cream, salsa, guacamole, black beans, olives) into small bowls.
  4. Assemble the Board: Place small bowls of sour cream, salsa, guacamole, black beans, and olives on a large board or platter. Pile tortilla chips in the center and around the bowls. Spoon warm seasoned beef over chips in spots. Drizzle warm cheese sauce over beef and chips. Scatter cherry tomatoes, pickled jalapeños, and black olives on top. Sprinkle with cilantro. Arrange lime wedges around the edges.
