These easy make-ahead freezer burritos are perfect for busy mornings, combining smoky beans, melty cheese, and warm tortillas for a comforting and filling breakfast that can be prepared in under 30 minutes.

  • 6 large flour tortillas (10-inch size)
  • 1 can black beans, drained and rinsed (15 oz / 425 g)
  • 1 cup cooked rice (white or brown) (200 g) – optional
  • 1 cup shredded cheddar cheese (115 g)
  • 4 large eggs
  • ½ medium onion, finely chopped
  • ½ cup diced bell peppers (75 g)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • Salt and pepper to taste
  • ½ cup salsa (120 ml) – optional

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the chopped onion and diced bell peppers. Sauté for about 5 minutes until softened and translucent, stirring occasionally to avoid burning.
  2. Push veggies to one side of the pan. Crack 4 large eggs into the empty side, season with a pinch of salt and pepper, and gently scramble until just set but still moist (about 3-4 minutes). Remove from heat and let cool slightly.
  3. In a large bowl, combine the black beans, cooked rice, sautéed veggies and eggs, shredded cheddar cheese, cumin, chili powder, and a bit of salt and pepper. Stir gently to combine everything evenly. If desired, add ½ cup salsa now for extra flavor and moisture.
  4. Warm tortillas briefly in the microwave or on a dry skillet for about 10 seconds each to make them pliable. Lay one flat, spoon about ½ cup (120 g) of filling in the center. Fold the sides in, then roll tightly from the bottom up, sealing the filling inside. Repeat for all tortillas.
  5. Place each wrapped burrito seam-side down on a parchment-lined baking sheet. Freeze for 1-2 hours until firm. Then transfer to freezer bags or airtight containers, separating layers with parchment to prevent sticking.

Notes

Warm tortillas briefly before rolling to prevent tearing. Do not overfill burritos to avoid bursting in the freezer. Flash freeze burritos on a baking sheet before storing to keep shape and prevent sticking. Reheat in microwave for 2-3 minutes or bake at 350°F (175°C) for 20-25 minutes for a crispier tortilla.
