These easy mini muffin tin pizza bites are the kind of recipe that makes you feel like a genius with almost zero effort. Using wonton wrappers instead of dough, they come together in about 20 minutes and are perfect for school lunches, parties, or a quick snack.

Ingredients

Scale
  • 1 package (12 ounces) wonton wrappers
  • ½ cup pizza sauce
  • 1 cup (4 ounces) shredded low-moisture part-skim mozzarella cheese
  • ½ cup (2 ounces) mini pepperoni (or regular pepperoni, quartered)
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • Optional toppings: diced bell peppers, sliced black olives, cooked crumbled sausage, mushrooms, fresh basil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray a 24-cup mini muffin tin with non-stick cooking spray.
  3. Press one wonton wrapper into each cup, forming a little bowl shape.
  4. Brush each wrapper lightly with olive oil.
  5. Sprinkle a pinch of garlic powder and Italian seasoning into each cup.
  6. Add about 1 teaspoon of pizza sauce to each cup (do not overfill).
  7. Sprinkle about 1 to 2 teaspoons of shredded mozzarella over the sauce.
  8. Top with 2-3 mini pepperoni pieces (or quartered regular pepperoni) per cup, pressing gently into the cheese.
  9. Bake for 10-12 minutes, until the edges are golden brown and the cheese is bubbly.
  10. Let cool in the pan for 2-3 minutes, then transfer to a cooling rack.
  11. Serve warm or at room temperature.

Notes

Don’t overfill with sauce to prevent sogginess. Brushing the wrappers with olive oil is essential for crispiness. For best results, use thin wonton wrappers, not egg roll wrappers. These can be frozen unbaked or baked; reheat in oven or air fryer for crispiest results.
