  • 1 cup (90g) rolled oats (old-fashioned for best chew)
  • ½ cup (130g) natural peanut butter (creamy or chunky)
  • 2 tbsp (15g) unsweetened cocoa powder (Dutch-processed optional)
  • 3 tbsp (60ml) honey
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (15g) chia seeds (optional)
  • ¼ cup (30g) protein powder (vanilla or chocolate flavor)
  • 2 tbsp (30g) mini chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Mix dry ingredients: In a medium bowl, combine rolled oats, cocoa powder, protein powder, chia seeds, and salt. Stir gently to distribute evenly (about 2 minutes).
  2. Add wet ingredients: Add peanut butter, honey, and vanilla extract to the dry mix. Use a sturdy spoon or spatula to combine until mixture starts to stick together (3-5 minutes).
  3. Optional – fold in mini chocolate chips evenly.
  4. Form the balls: Pinch off about a tablespoon (15g) of mixture and roll between palms to form balls. If too dry, add a splash more honey or a teaspoon of water. Makes about 15 balls (5-7 minutes).
  5. Chill: Place balls on parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  6. Store & enjoy: Transfer chilled balls to an airtight container. Ready to eat immediately but taste better after a few hours.

Notes

If peanut butter is oily, stir well before measuring. Use slightly damp hands to roll balls to prevent sticking. Chill is key for firm texture. Store in fridge up to one week or freeze up to three months. For vegan option, substitute honey with maple syrup and use plant-based protein powder.
