These no-bake chocolate chip cookie dough protein balls are a quick and easy snack that tastes like a treat but is packed with protein and fiber. Made with simple pantry ingredients, they come together in under 15 minutes and are perfect for meal prep, post-workout fuel, or a healthy dessert.

Ingredients

Scale
  • 1 cup (90g) old-fashioned rolled oats
  • ½ cup (128g) creamy peanut butter
  • ⅓ cup (110g) honey
  • ⅓ cup (60g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add the oats, ground flaxseed, and salt. Stir to distribute evenly.
  2. Add the wet ingredients: Add the peanut butter, honey, and vanilla extract to the bowl. Stir until combined, about 1-2 minutes.
  3. Fold in the chocolate chips: Gently fold the mini chocolate chips into the dough until evenly distributed.
  4. Chill the dough (optional but recommended): Cover the bowl and refrigerate for 15-20 minutes to make rolling easier.
  5. Roll into balls: Using your hands (lightly dampen with water if sticky), scoop about 1 tablespoon of dough and roll into smooth balls. Place on a parchment-lined baking sheet. You should get about 16-18 balls.
  6. Chill to set: Refrigerate the baking sheet for at least 30 minutes to firm up the balls.

Notes

For best texture, use a natural peanut butter that is not too runny. If dough is too sticky, add more oats 1 tablespoon at a time. If too dry, add a teaspoon of honey or water. Chilling the dough before rolling makes it easier to handle. These taste even better the next day as flavors meld.
