Easy No-Bake Strawberry Icebox Cake (Best Summer Dessert)

A simple, no-bake dessert made with layers of graham crackers, fresh strawberries, and a creamy filling. Perfect for hot summer days when you want an impressive dessert without turning on the oven.

  • 8 ounces cream cheese (full-fat, softened)
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

  • 1214 ounces graham crackers (one standard box)
  • Additional fresh strawberries for decorating (optional)
  • Fresh mint leaves for garnish (optional)
  • White chocolate shavings for garnish (optional)

Instructions

  1. Wash and dry strawberries. Remove tops and slice into even ¼-inch thick slices. Set aside about ½ cup of the prettiest slices for decorating the top.
  2. In a large mixing bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down sides of bowl.
  3. Add powdered sugar, vanilla extract, and salt to the cream cheese. Beat until combined and creamy. Set aside.
  4. In a separate clean bowl, pour in cold heavy cream. Using clean beaters, whip cream on medium-high speed until stiff peaks form, about 3-4 minutes.
  5. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until smooth, light, and pillowy.
  6. Spread a thin layer (about ½ cup) of the cream mixture on the bottom of a 9×13-inch baking dish.
  7. Arrange a single layer of graham crackers on top, breaking them as needed to fill gaps.
  8. Spread about 1 cup of the cream mixture evenly over the graham crackers. Arrange a layer of sliced strawberries on top, overlapping slightly.
  9. Repeat layers: graham crackers, cream, strawberries, graham crackers, cream, strawberries, graham crackers. End with a final layer of cream on top.
  10. Spread remaining cream mixture over the top layer of graham crackers, covering every bit of cookie. Create gentle swirls or a smooth finish.
  11. Arrange reserved strawberry slices on top in a decorative pattern.
  12. Cover dish tightly with plastic wrap, ensuring wrap doesn’t touch the surface of the cream.
  13. Refrigerate for at least 8 hours, but preferably 12-24 hours for best results.
  14. When ready to serve, use a sharp serrated knife to cut clean slices. Wipe knife between cuts for prettiest presentation.
  15. Serve cold, straight from the fridge. Garnish with fresh mint leaves if desired.

Notes

Don’t skip softening the cream cheese to avoid lumpy filling. Use a serrated knife to cut the cake for clean slices. Let the cake sit at room temperature for 10 minutes before serving for best flavor. Don’t overfill layers with strawberries to prevent a watery cake. Press graham crackers gently after each layer for even softening. This cake is best within the first 48 hours and can be stored covered in the refrigerator for up to 3 days. Not recommended for freezing.
