These no-bake energy bites are the perfect quick snack for busy days. Made with simple pantry ingredients like oats, peanut butter, honey, and chocolate chips, they come together in just 10 minutes with no oven required.

  • 1/3 cup honey (110g)
  • 1/3 cup mini chocolate chips (60g)

  • 1/4 teaspoon salt

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, add 1 cup rolled oats, 2 tablespoons ground flaxseed, and 1/4 teaspoon salt. Give it a quick stir with your spatula to distribute everything evenly.
  2. Add Wet Ingredients: Add 1/2 cup creamy peanut butter, 1/3 cup honey, and 1 teaspoon vanilla extract to the bowl. Don’t add the chocolate chips yet.
  3. Mix Everything Together: Start stirring with your spatula. Keep mixing until the oats absorb the moisture and everything comes together, about 2 minutes. The mixture should look uniform and slightly sticky. If too dry, add a teaspoon more honey or peanut butter. If too wet, add a tablespoon more oats.
  4. Add Chocolate Chips: Fold in 1/3 cup mini chocolate chips. Stir just until evenly distributed.
  5. Chill the Mixture: Refrigerate the bowl for 15-20 minutes to make the mixture firmer and easier to roll.
  6. Roll into Balls: Remove from fridge. Scoop about 1 tablespoon of mixture and roll between your palms to form 1-inch balls. Place on a baking sheet or plate.
  7. Final Chill: Refrigerate the energy bites for at least 30 minutes to firm up completely. For a quicker option, freeze for 15 minutes.
