A simple, one-bowl apple cinnamon snack cake that’s perfect for breakfast, snack time, or a casual dessert. Tender crumb with pockets of cinnamon-spiced apple and a crackly sugar top, made with everyday ingredients and minimal fuss.

  • 1 ½ cups (188g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • ½ cup (120ml) buttermilk
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon, divided
  • 1 large or 2 small apples (Honeycrisp, Fuji, or Granny Smith), peeled and diced into ¼-inch pieces
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease parchment and exposed pan sides.
  2. Peel and dice apple into ¼-inch cubes. In a small bowl, toss diced apple with ½ teaspoon cinnamon and 1 tablespoon of the granulated sugar (taken from measured sugar). Set aside.
  3. In a large mixing bowl, whisk together flour, remaining 1 ½ teaspoons cinnamon, baking powder, baking soda, and salt.
  4. Make a well in the center of dry ingredients. Add melted butter, both sugars, eggs, buttermilk, and vanilla. Whisk until just combined (about 20-30 strokes). Do not overmix; a few lumps are fine.
  5. Fold in cinnamon-sugar coated apples and any accumulated juices using a rubber spatula, about 8-10 folds.
  6. Pour batter into prepared pan and spread evenly. Optionally, sprinkle extra granulated sugar on top for a crackly crust.
  7. Bake for 30-35 minutes, checking at 25 minutes. Cake is done when a toothpick inserted in center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil for last 5-10 minutes.
  8. Cool in pan on a wire rack for 15 minutes. Use parchment sling to lift cake out and transfer to rack to cool completely. Dust with powdered sugar if desired. Slice into 9 squares and serve.

Notes

Don’t overmix the batter to avoid a tough cake. Room temperature ingredients emulsify better. Cut apples evenly for uniform cooking. Check for doneness early. Let cake cool completely before slicing to prevent crumbling. Cake tastes even better the next day.
