Instructions

  1. Peel and mash one ripe banana in your mixing container using a fork until smooth but slightly chunky (about 2 minutes).
  2. Stir in 2 tablespoons of peanut butter to the mashed banana until well combined. Warm peanut butter slightly if thick (about 1 minute).
  3. Add 1/2 cup rolled oats, 1 tablespoon chia seeds, a pinch of cinnamon, and 1/2 teaspoon vanilla extract. Stir to combine evenly (1-2 minutes).
  4. Pour in 1/2 cup milk and 1/4 cup Greek yogurt. Add honey or maple syrup if desired. Mix well until fully combined (2 minutes).
  5. Cover the jar or container tightly and refrigerate overnight or at least 6 hours to let oats absorb liquid and flavors meld.
  6. In the morning, stir the oats once. Add a splash of milk if too thick. Top with sliced bananas, chopped nuts, or a drizzle of peanut butter if desired (1-2 minutes).

Notes

Use old-fashioned rolled oats for best texture; instant oats get mushy. Natural peanut butter may separate, stir well before measuring. Adjust sweetness with honey or maple syrup as needed.
