  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup BBQ sauce
  • 3 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 1 large red bell pepper, cut into 1-inch chunks
  • 1 large green bell pepper, cut into 1-inch chunks
  • 1 medium red onion, cut into wedges
  • 1 medium zucchini, sliced into half-moons
  • 2 cups broccoli florets
  • Fresh parsley or chives for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or foil.
  2. Pat chicken thighs dry with paper towels. In a small bowl, mix smoked paprika, garlic powder, onion powder, 1 teaspoon salt, and ½ teaspoon black pepper. Rub spice mixture all over chicken, including under skin if possible.
  3. Place seasoned chicken skin-side up on one half of the prepared sheet pan. Roast for 20 minutes.
  4. While chicken roasts, toss bell peppers, red onion, and zucchini in a bowl with 2 tablespoons olive oil, ½ teaspoon salt, and ¼ teaspoon pepper. Set broccoli aside.
  5. After 20 minutes, remove pan from oven. Add oiled peppers, onion, and zucchini to the empty half of the pan. Brush each chicken thigh with about 2 tablespoons BBQ sauce. Return to oven.
  6. Roast for 15 minutes. Remove pan, tuck broccoli florets around chicken and vegetables. Brush chicken with another layer of BBQ sauce.
  7. Roast for 10-15 more minutes, until chicken reaches 175°F (80°C) and vegetables are tender. For extra crispy skin, broil for 2-3 minutes, watching closely.
  8. Let rest 5-10 minutes. Sprinkle with fresh parsley or chives and serve directly from the sheet pan.

Notes

Don’t crowd the pan to ensure caramelization. Pat chicken dry for crispy skin. Use an instant-read thermometer for best results. Watch the broiler closely to avoid burning the BBQ sauce. Line the pan for easy cleanup.
