  • 4 skin-on salmon fillets, about 6 oz (170g) each
  • 1 bunch fresh asparagus (about 1 lb / 450g), trimmed
  • 3 cloves garlic, minced fresh
  • 3 tablespoons honey
  • 2 tablespoons low sodium soy sauce
  • 1 medium lemon, zested and juiced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Snap or trim the woody ends off the asparagus. Spread them out on a lined baking sheet in a single layer. Drizzle with 1 tablespoon olive oil and sprinkle with a pinch of salt and pepper. Toss gently to coat evenly.
  3. In a small mixing bowl, whisk together the honey, soy sauce, minced garlic, lemon zest, and lemon juice until well combined.
  4. Place the salmon fillets skin-side down on the baking sheet, nestled beside the asparagus but not overlapping. Brush each fillet generously with the honey garlic sauce, reserving some sauce for later.
  5. Roast for about 12-15 minutes until the asparagus is tender and slightly caramelized and the salmon flakes easily with a fork. Check at 12 minutes and add more time if needed.
  6. In the last 2 minutes, brush the salmon again with the reserved honey garlic sauce and sprinkle a pinch of red pepper flakes if using.
  7. Remove from oven and let rest for 3 minutes. Serve with lemon wedges on the side.

Notes

Do not overcrowd the pan to ensure even roasting. Use fresh garlic and fresh lemon zest for best flavor. Watch the salmon near the end to avoid burning the honey glaze. You can substitute asparagus with green beans or broccolini. For gluten-free, use tamari instead of soy sauce. The honey garlic sauce can be made ahead and stored in the fridge for up to 3 days.
