  • Salt and black pepper to taste
  • 1 tablespoon olive oil (optional, for searing chicken)

Instructions

  1. Prepare the Peach BBQ Sauce: Drain the canned peaches, reserving the juice. Puree the peaches until smooth. In a mixing bowl, combine peach puree with ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, red pepper flakes (if using), salt, and pepper. Whisk until fully blended.
  2. Optional: Heat olive oil in a skillet over medium-high heat. Lightly brown the chicken on each side, about 2-3 minutes per side.
  3. Place the chicken at the bottom of the slow cooker. Pour the peach BBQ sauce evenly over the chicken, coating well.
  4. Cover and cook on low for 6 to 8 hours until chicken is tender and shreds easily. Alternatively, cook on high for 3 to 4 hours.
  5. Shred the chicken directly in the slow cooker using two forks and mix well with the sauce. Adjust seasoning as needed.
  6. Keep warm until serving. Use reserved peach juice to thin sauce if too thick.
