  • 1 large yellow onion, sliced into thick rings
  • 4 cloves garlic, smashed
  • 1 cup root beer or Dr. Pepper (not diet)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon liquid smoke (optional but recommended)
  • 12โ€“16 slider buns (brioche or potato rolls)
  • ยฝ cup your favorite barbecue sauce (or more to taste)
  • Coleslaw (optional, for serving)
  • Dill pickle chips (for serving)

Instructions

  1. Prep the pork shoulder: Pat the pork shoulder dry with paper towels. Trim any thick, hard fat caps, leaving a thin layer (about ยผ inch). Mix smoked paprika, garlic powder, onion powder, salt, pepper, dry mustard, and brown sugar in a small bowl. Rub this all over the pork, pressing into every crevice. Let sit at room temperature for 20 minutes.
  2. Layer the aromatics: Scatter sliced onion and smashed garlic cloves across the bottom of a 6-quart slow cooker.
  3. Sear the pork (optional but worth it): Heat a large skillet over medium-high heat with a tablespoon of oil. Sear the pork shoulder on all sides until deeply browned, about 3โ€“4 minutes per side.
  4. Add the cooking liquid: Place the seared pork shoulder on top of the onions and garlic. Pour root beer, apple cider vinegar, Worcestershire sauce, and liquid smoke around the pork (not directly over it). The liquid should come about halfway up the meat; add a splash of chicken broth or water if needed.
  5. Cook low and slow: Cover and cook on LOW for 8โ€“10 hours or on HIGH for 5โ€“6 hours, until the pork pulls apart with almost no resistance.
  6. Shred the pork: Carefully transfer the pork shoulder to a large cutting board or rimmed baking sheet. Discard the bone. Use two forks or meat claws to shred the meat into bite-sized pieces. Discard any large pieces of fat that didn’t render.
  7. Skim and reduce the cooking liquid: Strain the remaining liquid through a fine-mesh sieve into a fat separator or glass measuring cup. Let sit for 5 minutes, then skim off the fat. Return the defatted liquid to the slow cooker and simmer on HIGH, uncovered, for 10โ€“15 minutes to reduce slightly.
  8. Combine and season: Return the shredded pork to the slow cooker and toss with the reduced liquid. Add barbecue sauce to taste (start with ยฝ cup). Let warm through on LOW for 15 minutes.
  9. Toast the buns: Split the slider buns and toast them cut-side down on a griddle, in a skillet, or under the broiler for 1โ€“2 minutes.
  10. Assemble the sliders: Pile the pulled pork onto the bottom buns. Top with coleslaw (if using) and pickle chips. Cap with the top bun. Serve immediately or keep warm in a 200ยฐF oven for up to 30 minutes.
