Ingredients

Scale
  • 1 pound ground beef (80/20 works best)
  • 1 packet taco seasoning
  • 1 can (16 oz) refried beans
  • 8 oz cream cheese, softened to room temperature
  • 1 cup sour cream (full-fat recommended)
  • 1 ½ cups shredded Mexican blend cheese
  • ½ cup salsa (mild, medium, or hot)
  • Optional: ¼ cup sliced black olives (for garnish)
  • Optional: 2-3 green onions, sliced thin
  • Tortilla chips for serving
  • For the spiderweb design: 2-3 tablespoons sour cream
  • For the spiderweb design: 1-2 tablespoons hot sauce or salsa verde

Instructions

  1. Preheat your oven to 350°F (175°C). Let cream cheese sit out to soften.
  2. Brown the ground beef in a skillet over medium-high heat for 6-8 minutes until no pink remains. Drain excess fat thoroughly.
  3. Return drained beef to skillet. Add taco seasoning and ¼ cup water. Simmer for 2-3 minutes until liquid thickens.
  4. Spread refried beans evenly across the bottom of a 9×13-inch baking dish.
  5. In a medium bowl, beat softened cream cheese until smooth. Spread carefully over the refried beans, keeping layers separate.
  6. Sprinkle seasoned ground beef evenly over the cream cheese layer. Press down gently.
  7. Sprinkle shredded Mexican blend cheese over the beef.
  8. Bake for 15 minutes until cheese is melted and bubbly.
  9. Remove from oven and let cool for 2-3 minutes. In a small bowl, mix 2-3 tablespoons sour cream with a splash of milk to thin. Pipe a spiral pattern on top using a piping bag or zip-top bag with corner snipped.
  10. Using a toothpick or skewer, drag lines from the center outward through the spiral to create a web effect.
  11. Place two black olives on top for the spider’s body (whole for abdomen, half for head). Cut thin strips from another olive for legs.
  12. Sprinkle sliced green onions over the top. Serve immediately with sturdy tortilla chips.

Notes

Don’t skip cooling the dip before adding the sour cream web, or it will melt. Drain beef thoroughly to avoid greasy dip. Use full-fat sour cream for best texture. Can be assembled up to 24 hours ahead (without web) and baked just before serving.
