A quick and wholesome pasta soup designed to stay warm in a thermos, perfect for school lunches and busy mornings. This comforting recipe features small pasta shapes in a mild tomato broth with veggies and a touch of Parmesan cheese.

  • 2 cups low-sodium chicken or vegetable broth
  • 1/2 cup canned diced tomatoes, drained
  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped celery
  • 1 small garlic clove, minced
  • 1 teaspoon olive oil
  • 1/2 teaspoon dried basil or Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons grated Parmesan cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Finely chop the carrots, celery, and garlic. Drain the canned tomatoes and set aside your pasta and broth.
  2. Heat olive oil in a medium saucepan over medium heat. Add carrots, celery, and garlic. Cook, stirring occasionally, until softened and fragrant—about 4 minutes. Watch closely so garlic doesn’t burn.
  3. Stir in the diced tomatoes and dried basil. Cook for another minute to blend flavors.
  4. Add the broth and bring the mixture to a gentle simmer.
  5. Add the pasta directly to the simmering broth. Stir occasionally to prevent sticking. Cook until pasta is just al dente, about 6-8 minutes.
  6. Add salt and pepper to taste, going light on salt as the cheese adds saltiness later.
  7. Remove from heat and let cool slightly for about 2 minutes to prevent overheating the thermos.
  8. Stir in the Parmesan cheese and fresh parsley if using. Immediately pour the soup into the preheated thermos and seal tightly.
  9. Keep the thermos upright until lunch. Serve warm straight from the thermos.

Notes

Preheat your thermos with boiling water before adding the soup to keep it warm for hours. Use small pasta shapes to prevent clumping and cook pasta al dente as it will soften further in the thermos. Stir in Parmesan cheese just before sealing to maintain creaminess. For gluten-free or dairy-free options, use gluten-free pasta and substitute cheese with plant-based alternatives.
