Flavorful Balsamic Roasted Strawberry Bruschetta

A quick and easy appetizer featuring sweet-tart balsamic roasted strawberries paired with creamy goat cheese on toasted baguette slices. Perfect for entertaining and casual get-togethers.

  • 2 cups fresh strawberries, hulled and halved
  • 2 tablespoons balsamic vinegar (preferably aged)
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme, finely chopped (optional)
  • French baguette, sliced into 1/2 inch pieces
  • 4 ounces goat cheese, softened
  • 1 tablespoon extra virgin olive oil
  • Pinch of freshly ground black pepper
  • Light sprinkle of sea salt

Instructions

  1. Preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. Hull and halve about 2 cups of fresh strawberries and place them in a mixing bowl.
  3. Add 2 tablespoons balsamic vinegar, 1 tablespoon honey, and 1 teaspoon chopped fresh thyme to the strawberries. Gently mix to coat evenly.
  4. Spread the strawberries in a single layer on the baking sheet. Roast for 15-18 minutes until soft and slightly caramelized but not mushy.
  5. While strawberries roast, slice the French baguette into 1/2 inch pieces. Brush each slice lightly with extra virgin olive oil.
  6. Toast the bread slices under a broiler or in a toaster oven until crisp and golden, about 3-4 minutes. Watch carefully to prevent burning.
  7. Soften 4 ounces of goat cheese by letting it sit at room temperature for 10 minutes.
  8. Spread a generous layer of goat cheese on each toasted bread slice.
  9. Top each slice with a spoonful of warm balsamic-roasted strawberries.
  10. Finish with a light sprinkle of sea salt and freshly ground black pepper.
  11. Serve immediately, warm or at room temperature.

Notes

Do not overcrowd the baking sheet to avoid steaming the strawberries. Watch roasting time carefully to prevent mushy berries. Use room temperature goat cheese for easy spreading. Toast bread slices just before assembling to keep them crisp. For dairy-free, substitute goat cheese with plant-based cream cheese and honey with maple syrup. Gluten-free bread can be used as a substitute for baguette.
