  • 1 large yellow bell pepper, cut into 1-inch pieces
  • 1 medium pineapple, peeled and cut into 1-inch chunks
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes before use)

Instructions

  1. Prepare the marinade by whisking together soy sauce, honey, sriracha, minced garlic, vinegar, smoked paprika, salt, and pepper in a medium bowl.
  2. Add the cubed chicken to the marinade, toss to coat evenly, cover, and refrigerate for at least 20 minutes (ideally 1 hour).
  3. Cut bell peppers and pineapple into uniform 1-inch chunks and set aside.
  4. Thread chicken, pineapple, and bell peppers alternately onto skewers, leaving space between pieces for heat circulation.
  5. Preheat grill to medium-high heat (375-400°F). Lightly oil the grates or brush grill pan with oil.
  6. Grill kabobs for 10-12 minutes, turning every 3-4 minutes until chicken reaches an internal temperature of 165°F and pineapple is caramelized.
  7. Remove kabobs from grill and let rest for 5 minutes before serving.

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. Marinate chicken for at least 20 minutes, ideally 1 hour, for best flavor.
