A quick and easy grilled street corn salad with smoky, sweet, and tangy flavors, topped with a creamy zesty lime crema that adds a refreshing kick.

Ingredients

  • 4 ears of fresh corn, husked
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 small red onion, finely diced
  • 1 jalapeño, deseeded and minced (optional)
  • 1/2 cup sour cream or Mexican crema
  • 1 lime, juiced and zested
  • 1 garlic clove, minced
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill or grill pan to medium-high heat, about 10 minutes.
  2. Grill the husked ears of corn directly on the grill, turning every 2-3 minutes until kernels are charred all over, about 10-12 minutes.
  3. While the corn grills, mix sour cream, lime juice, lime zest, minced garlic, chili powder, salt, and pepper in a bowl until smooth.
  4. Let the grilled corn cool slightly, then cut the kernels off the cob into a large mixing bowl.
  5. Add crumbled cotija cheese, chopped cilantro, diced red onion, and minced jalapeño to the corn and toss gently.
  6. Pour the zesty lime crema over the corn mixture and fold together until well coated. Adjust seasoning if needed.
  7. Serve immediately or chill in the refrigerator for 15-20 minutes to let flavors meld.

Notes

If you don’t have a grill, broil the corn in the oven but watch closely to avoid burning. For dairy-free, substitute sour cream with plant-based yogurt. Adjust chili powder to control heat. Serve chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 3 days.
