A quick and easy roasted Hatch chili salsa verde with smoky depth, perfect for last-minute gatherings or weeknight cravings. This salsa balances smoky heat with fresh brightness for a crowd-pleasing dip or sauce.

  • 6 medium Hatch chilies, roasted and peeled
  • 8 medium tomatillos, husked and rinsed
  • 1 small white onion, roughly chopped
  • 3 fresh garlic cloves, peeled
  • 1/2 cup fresh cilantro leaves, packed
  • 2 tablespoons fresh lime juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2 tablespoons olive oil
  • Optional: 1 small jalapeño, seeded for less heat

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with foil for easy cleanup.
  2. Spread the Hatch chilies and husked tomatillos evenly on the baking sheet. Ensure chilies are dry for proper roasting.
  3. Roast for 15-20 minutes, turning halfway through, until skins are blistered and charred and tomatillos are softened.
  4. Remove chilies and tomatillos from the oven. Place chilies in a bowl and cover with plastic wrap or a towel for 10 minutes to steam.
  5. Peel skins off the chilies, remove seeds if desired, and roughly chop. Roughly chop the tomatillos.
  6. Combine roasted chilies, tomatillos, chopped onion, garlic cloves, cilantro, lime juice, smoked paprika, cumin, salt, and olive oil in a blender or food processor.
  7. Pulse until desired consistency is reached (slightly chunky or smooth). Taste and adjust salt or lime juice as needed.
  8. Chill salsa for at least 15 minutes before serving to let flavors meld.

Notes

Keep a bowl of ice water nearby when peeling chilies to rinse your fingers if they tingle. Do not skip the resting step after blending to enhance flavor. Pulse salsa rather than blending continuously to maintain texture. Roasting garlic whole mellows its sharpness and adds richness. For less heat, remove seeds from chilies. Substitute poblano peppers if Hatch chilies are unavailable.
