  1. Make the Cheddar Herb Crust Dough (15-20 minutes): In a large bowl, whisk together the flour, salt, and sugar. Add the cold, cubed butter and cheddar cheese. Using a pastry cutter or food processor pulse until the mixture resembles coarse crumbs with pea-sized pieces of butter. Stir in the chopped thyme.   3. Roll Out the Crust (10 minutes): On a lightly floured surface, roll out the chilled dough into a 12-inch circle, about ⅛ inch thick.
