A refreshing and bold mocktail combining sweet watermelon, spicy jalapeño, tangy lime, and a salty Tajín rim, perfect for summer gatherings and all ages.

Ingredients

  • 4 cups fresh cubed watermelon (seedless if possible)
  • Juice of 2 limes (about 1/4 cup or 60 ml)
  • 1 small jalapeño, thinly sliced (remove seeds for less heat)
  • 12 tablespoons agave nectar or honey
  • 1 cup (240 ml) club soda or sparkling water
  • Tajín seasoning for rimming the glass
  • Pinch of salt (optional, for Tajín rim)
  • Ice cubes for serving

Instructions

  1. Place the cubed watermelon in a blender and blend until smooth, about 30 seconds to 1 minute. For a pulp-free drink, strain the juice through a fine mesh strainer.
  2. Add the thin jalapeño slices to the watermelon juice and let it sit for about 10 minutes to infuse heat. Taste after 5 minutes and remove slices if too spicy.
  3. Stir in the fresh lime juice and agave nectar or honey. Adjust sweetness to taste.
  4. Rub a lime wedge around the rim of each glass. Dip the rims into Tajín seasoning to coat evenly.
  5. Fill each glass halfway with the watermelon jalapeño mixture. Add ice cubes, then top off with sparkling water or club soda. Gently stir once to combine.
  6. Garnish with a slice of jalapeño or a small wedge of watermelon on the rim. Serve immediately.

Notes

For less heat, remove jalapeño seeds or use fewer slices. Tajín rim is essential for authentic flavor and texture. Prepare watermelon juice and jalapeño infusion ahead and keep chilled to save time. Use seedless watermelon for sweetness and ease. Substitute sparkling water with club soda for fizz or add a splash of tequila for an alcoholic version.
