  • 1 cup full-fat Greek yogurt
  • 2 tablespoons finely chopped fresh dill
  • 1 small clove garlic, minced
  • 2 tablespoons finely diced red onion (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon extra virgin olive oil
  • Salt and black pepper to taste (start with ½ teaspoon salt)
  • Pinch of sugar or honey (optional)

Instructions

  1. Wash and dry cucumbers. Slice thinly (about 1/8 inch or 3 mm thick) using a sharp knife or mandoline slicer. Scoop out seeds if large or watery.
  2. Place sliced cucumbers in a colander, sprinkle with a pinch of salt, and let sit for 10-15 minutes to draw out excess moisture.
  3. Drain and gently squeeze cucumbers or wrap in a clean kitchen towel to absorb released water.
  4. In a medium mixing bowl, whisk together Greek yogurt, lemon juice, olive oil, and minced garlic until smooth. Season with salt and black pepper. Add sugar or honey if desired.
  5. Fold in chopped fresh dill and diced red onion (if using).
  6. Add drained cucumbers to the dressing and gently toss to coat evenly without bruising.
  7. Cover and refrigerate for at least 30 minutes or overnight to allow flavors to meld.
  8. Before serving, stir gently and adjust seasoning if needed. Serve chilled.
