  • 1 pound (450 grams) garlic scapes, trimmed
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 medium lemon (about 2 tablespoons)
  • Flaky sea salt (such as Maldon or fleur de sel), for finishing
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Rinse the garlic scapes under cold water and pat dry. Trim off the tough ends (about 1 to 2 inches).
  2. Preheat your grill or grill pan to medium-high heat, about 400°F (205°C).
  3. In a mixing bowl, toss the garlic scapes with olive oil and lemon juice until evenly coated.
  4. Place the scapes perpendicular to the grill grates and grill for 2 to 3 minutes per side, turning gently until tender with light char marks.
  5. Transfer to a serving dish, sprinkle with flaky sea salt and freshly ground black pepper if using, and add another squeeze of lemon juice. Serve immediately.

Notes

If garlic scapes are fibrous, blanch in boiling water for 30 seconds before grilling. Avoid over-oiling to prevent flare-ups. Keep grill at medium-high heat for best results. Give scapes space on the grill to cook evenly and flip gently with tongs to avoid breaking.
