  • 1 ½ cups fresh ripe figs, stems removed and quartered
  • 1 ¼ cups granulated sugar (can substitute organic cane sugar or coconut sugar)
  • 1 package (about 1.75 oz) powdered fruit pectin (e.g., Sure-Jell)
  • 2 tablespoons freshly squeezed lemon juice
  • Optional: a pinch of cinnamon or vanilla extract

Instructions

  1. Peel, pit, and dice the peaches into small chunks. Remove stems from figs and quarter them. Place all fruit in a large mixing bowl.
  2. Using a potato masher or fork, gently crush the fruit until you reach a jammy consistency but still have some texture — not completely pureed.
  3. In a small saucepan, combine the sugar and powdered pectin. Stir well to blend.
  4. Heat the sugar-pectin mix over medium heat, stirring constantly until it boils. Let it boil hard for 1 minute, then remove from heat.
  5. Pour the hot sugar-pectin mixture over the mashed fruit in the bowl. Add the fresh lemon juice and optional cinnamon or vanilla if using. Stir quickly and thoroughly to combine.
  6. Spoon the jam into clean jars or freezer-safe containers, leaving about ½ inch headspace. Seal tightly.
  7. Refrigerate for 24 hours before using, or freeze for longer storage. The jam thickens as it chills.

Notes

Use ripe but firm fruit to avoid watery jam. Mash gently to keep some texture. Boil sugar and pectin to activate pectin properly. Stir hot syrup into fruit quickly to prevent premature setting. Clean jars thoroughly to prevent spoilage. Optional flavor additions include cinnamon, vanilla, balsamic vinegar, or fresh basil. For low-sugar versions, use low-sugar pectin and reduce sugar by half.
