  • 1 medium jalapeño, finely diced (seeds removed to reduce heat if desired)
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • Juice of 2 limes (about 3 tablespoons)
  • 1 small clove garlic, minced
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Peel the peaches by blanching briefly in boiling water or using a paring knife, then dice into 1/2-inch cubes (~10 minutes).
  2. Cut the jalapeño in half lengthwise, remove seeds if desired, then finely dice. Finely chop the red onion (~5 minutes).
  3. Roughly chop the cilantro leaves and mince the garlic finely (~2 minutes).
  4. In a medium mixing bowl, gently toss together the diced peaches, jalapeño, red onion, cilantro, and garlic. Add lime juice and olive oil (if using). Sprinkle with salt and stir gently to combine (~3 minutes).
  5. Let the salsa sit at room temperature for at least 10 minutes before serving to allow flavors to meld. Taste and adjust salt or lime juice as needed (~10 minutes).

Notes

Remove jalapeño seeds to reduce heat. Let salsa rest for 10 minutes before serving to meld flavors. Store refrigerated in airtight container up to 2 days. Bring to room temperature before serving for best flavor. For milder salsa, substitute jalapeño with poblano or bell pepper. Optional olive oil adds a silky finish.
