  • 2 cups fresh or frozen raspberries (thawed and drained if frozen)
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 2 cups vanilla or plain yogurt (Greek yogurt recommended)
  • 12 tablespoons honey or maple syrup (optional)
  • 1/4 cup sliced toasted almonds (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the Raspberry Sauce: In a small saucepan, combine 2 cups raspberries, 1/4 cup granulated sugar, and 1 tablespoon fresh lemon juice. Cook over medium heat, stirring occasionally, until raspberries break down and mixture thickens slightly, about 8 to 10 minutes.
  2. Strain the Sauce: Pour the sauce through a fine mesh sieve into a bowl, pressing gently to extract juices. Discard seeds. Let sauce cool to room temperature, about 15 minutes.
  3. Prepare the Peaches: Peel peaches by blanching in boiling water for 30 seconds or using a paring knife. Slice into thin wedges.
  4. Sweeten the Yogurt: Stir 2 cups yogurt with 1-2 tablespoons honey or maple syrup to taste.
  5. Toast the Almonds: In a dry skillet over medium heat, toast sliced almonds for 3-4 minutes until golden and fragrant. Remove from heat.
  6. Assemble the Parfaits: In clear glasses, layer 2 tablespoons sweetened yogurt, a few peach slices, then 1-2 tablespoons raspberry sauce. Repeat layers until glass is filled. Finish with a drizzle of raspberry sauce and sprinkle toasted almonds on top.
  7. Garnish and Chill: Add a fresh mint leaf on top. Chill parfaits in the fridge for at least 20 minutes before serving.

Notes

For a thicker parfait, strain whey from yogurt using cheesecloth for 30 minutes before mixing. Assemble parfaits just before serving to keep peaches from browning. Raspberry sauce can be stored up to 5 days refrigerated. Use plant-based yogurt and maple syrup for a vegan version. Toast almonds carefully to avoid burning.
