These Fresh Rainbow Fruit Kabobs are a quick, colorful, and healthy snack perfect for lunch boxes or a refreshing treat. They combine a variety of fresh fruits threaded on skewers with a light lime juice dressing for a vibrant and delicious snack.

Ingredients

  • Strawberries – hulled and halved
  • Orange segments – peeled and trimmed, seedless if possible
  • Yellow pineapple chunks – fresh or canned in juice, drained
  • Green grapes – halved if large, seedless preferred
  • Blueberries – whole, washed
  • Purple grapes or blackberries – halved if large
  • Fresh lime juice – about 1 tablespoon
  • Optional: honey or maple syrup for drizzling

Instructions

  1. Wash and prep the fruit: rinse all fruits gently under cool water. Hull and halve the strawberries, peel and segment the oranges removing any pith, cut the pineapple into bite-sized chunks, and halve larger grapes and blackberries. (About 10 minutes)
  2. Combine fruit and lime juice: place all prepped fruit in a large mixing bowl. Pour in the fresh lime juice and toss gently to coat evenly. (2-3 minutes)
  3. Thread the fruit onto skewers: starting with a strawberry piece, then orange segment, pineapple chunk, green grape, blueberry, and purple grape, repeat until you reach near the end of the skewer. Aim for about 5-6 pieces per skewer. (5-7 minutes)
  4. Optional sweet touch: lightly drizzle a teaspoon of honey or maple syrup over the assembled kabobs if desired. (1-2 minutes)
  5. Chill before serving: place the kabobs on a plate or container and refrigerate for at least 15 minutes to meld flavors and keep fruit crisp.
