Instructions

  1. Wash and dry all vegetables thoroughly to keep them crisp.
  2. Slice the red bell pepper into thin strips about 3 inches long and 1/4 inch thick.
  3. Peel and cut the carrots into sticks roughly the same size as the bell peppers; optionally use a vegetable peeler to make thin ribbons.
  4. Halve the yellow cherry tomatoes.
  5. Slice the cucumber into rounds about 1/4 inch thick.
  6. Shred the purple cabbage thinly using a mandoline or knife.
  7. Trim and rinse the snap peas.
  8. Prepare the dip by mixing 1/2 cup hummus with 2 tablespoons plain Greek yogurt, a squeeze of fresh lemon juice, and a pinch of garlic powder until smooth.
  9. Arrange the vegetables in the bento box by color groups to create a rainbow effect.
