Fresh Watermelon Feta Mint Skewers

A quick and easy no-cook summer appetizer featuring juicy watermelon, creamy feta, and fresh mint threaded on skewers. Perfect for backyard parties and light snacking.

  • 4 cups watermelon, cut into 1-inch cubes (about 600g)
  • 1 cup feta cheese, cut into small cubes or crumbled (about 150g)
  • 2025 fresh mint leaves, washed and patted dry
  • 1 tablespoon extra virgin olive oil (optional)
  • A pinch of freshly ground black pepper
  • 1 teaspoon lemon or lime zest (optional)
  • 1012 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Cut the watermelon into 1-inch cubes, about 4 cups (600g). Rinse and pat dry if overly juicy.
  2. Slice about 1 cup (150g) of feta into small cubes or use crumbled feta.
  3. Wash 20-25 fresh mint leaves and pat dry, removing any tough stems.
  4. Using soaked wooden skewers, thread one watermelon cube, one mint leaf folded in half, one feta cube, and repeat until the skewer is full (3-4 sets). Leave about an inch at the bottom for handling.
  5. Lightly drizzle the skewers with 1 tablespoon of extra virgin olive oil. Sprinkle with freshly ground black pepper and lemon or lime zest if using.
  6. Place the skewers on a serving platter and refrigerate for 15-20 minutes before serving to let flavors meld and keep cool.

Notes

Use seedless watermelon for ease. Keep feta chilled until assembly to maintain shape. Soak wooden skewers to prevent burning if grilling. Pat watermelon dry if too juicy to avoid sogginess. Assemble skewers just before serving for best texture. Can be grilled briefly for a warm variation.
