Instructions

  1. Cut the watermelon into 1-inch cubes, aiming for uniform pieces to avoid mushiness.
  2. Crumble the feta cheese into bite-sized pieces.
  3. Wash, pat dry, and roughly chop the fresh mint leaves.
  4. In a small bowl, whisk together the balsamic vinegar and extra virgin olive oil. Adjust sweetness with honey or maple syrup if desired.
  5. In a large bowl, gently combine the watermelon cubes, crumbled feta, and chopped mint.
  6. Pour the balsamic dressing over the salad and toss lightly to combine without crushing the watermelon.
