Fresh Watermelon Lemonade Slush with Tajín Rim

A quick and easy refreshing summer drink combining sweet watermelon, tangy lemonade, and a spicy-salty Tajín rim for a perfect icy treat.

  • 4 cups fresh watermelon chunks (seedless if possible; about 1 small watermelon)
  • 1 cup freshly squeezed lemon juice (from about 46 lemons)
  • 1/3 cup granulated sugar (adjust to taste; can substitute with honey or agave syrup)
  • 1 cup ice cubes
  • 1/2 cup cold water (optional, for adjusting consistency)
  • 1/4 cup Tajín seasoning
  • 1 lime wedge (to moisten glass rims)
  • Optional: coarse sea salt mixed with Tajín for extra crunch

Instructions

  1. Pour the Tajín seasoning into a small shallow bowl. Rub the rim of each glass with a lime wedge until moist but not dripping. Dip the rim into the Tajín, twisting slightly to coat evenly. Set glasses aside to let the rim dry slightly (about 5 minutes).
  2. Using a citrus juicer, squeeze fresh lemon juice into a bowl or measuring cup. Remove any seeds. You should have about 1 cup (240 ml) of juice.
  3. Place the watermelon chunks in the blender. Add the lemon juice, sugar, ice cubes, and cold water if using. Blend on high until smooth and slushy — about 45 seconds. If too thick, add a splash of cold water and pulse again.
  4. Taste and adjust sweetness by adding more sugar or honey if needed. If too tart, add a pinch of salt to balance.
  5. Pour the watermelon lemonade slush into the prepared glasses. Garnish with a small wedge of watermelon or a lime wheel on the rim and serve immediately.

Notes

Pre-freeze watermelon chunks for an hour to speed chilling but avoid freezing too long to prevent icy crystals. Use light, even coating of Tajín on rims for best flavor. Blend in batches if blender is not powerful. Best served fresh. Leftovers can be refrigerated up to 24 hours and re-blended before serving.
