- 1 cup (240ml) chilled Prosecco or dry sparkling wine
- 10–12 fresh mint leaves, roughly torn
- 1 tablespoon (15ml) freshly squeezed lemon juice
- 1–2 teaspoons (5-10ml) simple syrup (optional)
- 1 cup (240ml) ice cubes
Instructions
- Measure out 3 cups (450g) of frozen sliced peaches. Tear about 10-12 fresh mint leaves to release their oils. Squeeze 1 tablespoon (15ml) of fresh lemon juice. If using simple syrup, have 1-2 teaspoons (5-10ml) ready.
- Place the frozen peaches and 1 cup (240ml) of ice cubes into a high-speed blender. Pulse on high for about 30-45 seconds until you get a coarse slushie texture. Some ice chunks remaining is fine.
- Add the torn mint leaves and lemon juice. Blend for another 15 seconds to infuse the mint flavor without bitterness.
- Taste the mixture and add 1-2 teaspoons (5-10ml) of simple syrup if more sweetness is desired. Blend for 5 seconds to combine.
- Remove the blender lid insert and slowly pour 1 cup (240ml) of chilled Prosecco into the blender. Gently fold the bubbles into the slushie by stirring carefully with a spoon—do not blend to preserve the fizz.
- Spoon or pour the frozen peach bellini slushie into flute or cocktail glasses. Garnish with a sprig of fresh mint and a thin peach slice if desired. Serve immediately.
Notes
Do not blend the Prosecco with the frozen peaches to preserve the bubbles. Use short pulses when blending frozen fruit to maintain slushie texture. If the slushie thickens too much, add a tablespoon of Prosecco or cold water and stir gently. For a non-alcoholic version, replace Prosecco with sparkling water or lemon-lime soda and add peach nectar for sweetness.
