Healthy Buffalo Cauliflower Bites: Easy Game Day Snack

Crispy, spicy, and completely addictive baked buffalo cauliflower bites that disappear faster than wings at any party. A healthy game day snack that even vegetable skeptics love.

  • 1 large head of cauliflower, cut into bite-sized florets (about 45 cups)
  • 1 cup all-purpose flour (or gluten-free all-purpose blend)
  • 1 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • Olive oil spray or cooking spray
  • ½ cup buffalo hot sauce (preferably Frank’s RedHot Original)
  • 2 tablespoons unsalted butter, melted (or vegan butter for dairy-free)
  • 1 teaspoon honey or maple syrup (optional)
  • 1 tablespoon apple cider vinegar (optional, if hot sauce isn’t vinegar-forward)
  • Ranch dressing or blue cheese dressing (for serving)
  • Celery sticks and carrot sticks (for serving)
  • Fresh chives or green onions, chopped (for garnish)
  • Sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper and place a wire cooling rack on top if using. Spray the rack generously with olive oil spray.
  2. Remove the leaves and tough stem from the cauliflower. Cut into bite-sized florets about 1 to 1½ inches each. You should have about 4 to 5 cups.
  3. In a medium bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne (if using). Slowly pour in the milk while whisking until you have a smooth batter (pancake batter consistency).
  4. Add the cauliflower florets to the batter and toss gently until evenly coated. Arrange in a single layer on the prepared baking sheet, leaving space between each. Spray tops lightly with olive oil spray. Bake for 15 minutes, until the batter is set and starting to turn golden at the edges.
  5. While the cauliflower bakes, make the buffalo sauce. In a small saucepan over low heat (or microwave in 20-second intervals), melt the butter. Whisk in the buffalo hot sauce and honey or maple syrup if using. Taste and adjust heat as desired. Keep warm.
  6. Remove the cauliflower from the oven. Using tongs, dip each floret into the buffalo sauce, turning to coat all sides. Let excess drip off before placing back on the baking sheet. Spray again lightly with olive oil spray. Return to the oven and bake for another 10 to 12 minutes, until edges are dark golden and sauce has caramelized.
  7. Remove from the oven and let rest on the baking sheet for 2 to 3 minutes. Transfer to a serving platter, sprinkle with chopped chives or green onions, and serve immediately with ranch or blue cheese dressing and celery sticks.

Notes

The double-bake method is key for crispy cauliflower. Don’t oversoak in sauce. For best results, cut florets uniformly and avoid overcrowding the baking sheet. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in the oven at 375°F for 5-7 minutes or in an air fryer at 350°F for 3 minutes.
