A quick, easy, and protein-packed grilled shrimp skewer recipe with a vibrant marinade, perfect for healthy meals and summer BBQs.

  • 1 pound (450g) large raw shrimp, peeled and deveined
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • 68 wooden or metal skewers (if wooden, soaked in water for 30 minutes)

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels.
  2. In a medium bowl, combine olive oil, minced garlic, fresh lemon juice, smoked paprika, crushed red pepper flakes (if using), salt, and black pepper. Whisk until well blended.
  3. Add the shrimp to the bowl and toss until evenly coated. Cover and let sit at room temperature for 15 minutes.
  4. Thread 4-5 shrimp onto each skewer, leaving a little space between each shrimp for even cooking.
  5. Heat your grill or grill pan to medium-high heat (about 400°F / 200°C). Brush the grates with oil to avoid sticking.
  6. Place skewers on the grill and cook for 2-3 minutes per side, until shrimp turn pink and opaque with slight char marks.
  7. Remove from heat, sprinkle with fresh chopped parsley, and serve immediately with lemon wedges.

Notes

Pat shrimp dry before marinating to ensure a good sear. Marinate shrimp for no longer than 30 minutes to avoid a rubbery texture. Use high heat and flip shrimp only once for best results. Soak wooden skewers to prevent burning.
