  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour or all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips (optional)
  • ½ cup chopped pecans (optional)
  • ¼ cup dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups well.
  2. In a large bowl, whisk together the pumpkin puree, Greek yogurt, eggs, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth and creamy.
  3. In a separate medium bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt for about 20 seconds.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold them together gently until just combined. A few lumps are fine; do not overmix.
  5. If using, fold in chocolate chips, pecans, or dried cranberries with about 5 gentle folds.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  7. Bake for 18 to 22 minutes, until the tops are golden brown and spring back when gently pressed, or a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid dense muffins. Measure flour by spooning into the cup and leveling off. Use room temperature ingredients for best results. Rotate the pan halfway through baking for even browning. Let muffins cool completely before storing to prevent sogginess.
