  • 12 tablespoons raw honey or maple syrup
  • 1 teaspoon lemon juice (fresh-squeezed preferred)

Instructions

  1. Prepare your molds: Place silicone molds on a baking sheet or flat plate.
  2. Combine the liquids: In a small mixing bowl, whisk together elderberry syrup, fruit juice, honey or maple syrup, and lemon juice. Taste and adjust sweetness if needed.
  3. Sprinkle in the gelatin: Slowly sprinkle gelatin over the liquid while whisking constantly to avoid clumps.
  4. Whisk until smooth: Continue whisking for 2 minutes until mixture is completely smooth with no visible granules.
  5. Fill the molds: Using a dropper or small spoon, fill each mold cavity to the top. Work quickly as mixture thickens.
  6. Refrigerate: Place the baking sheet with filled molds in the refrigerator for 2-3 hours until firm.
  7. Remove from molds: Gently flex the silicone mold to release gummies. If they stick, freeze for 5 minutes.
