  • ¾ cup (190g) natural peanut butter (creamy or chunky, no added sugar or oils)
  • ⅓ cup (115g) honey
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon sea salt
  • ¼ cup (45g) mini chocolate chips (optional)

Instructions

  1. Combine dry ingredients: In a mixing bowl, stir together rolled oats, chia seeds, ground flaxseed, and sea salt.
  2. Add wet ingredients: Pour in natural peanut butter, honey, and vanilla extract. Mix thoroughly until the mixture is uniformly sticky and thick. Add water a teaspoon at a time if too dry.
  3. Optional chocolate chips: Gently fold in mini chocolate chips if using.
  4. Form the balls: Scoop out portions of the mixture and roll them between your palms to form 1-inch balls. Lightly wet hands or chill mixture if sticky.
  5. Chill to set: Place balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Store and enjoy: Transfer to an airtight container and refrigerate up to one week or freeze for longer storage.

Notes

Use natural peanut butter that separates and stir well before use. Rolled oats are best for texture; quick oats can be mushy and steel-cut oats too hard. Adjust moisture by adding honey or water if crumbly, or oats/flaxseed if too sticky. Chilling helps balls firm up and hold shape better. Variations include nut-free seed butters, adding cocoa powder, dried fruit, protein powder, or spices.
