  • 1 large egg, lightly beaten

  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for searing)
  • 2 cups cooked quinoa (or brown rice)
  • 2 cups roasted broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup marinara sauce (no added sugar preferred)
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, breadcrumbs, Parmesan, beaten egg, minced garlic, oregano, salt, and pepper. Mix with your hands until just combined; do not overmix.
  3. Roll the mixture into 1.5-inch balls (about 16-18 meatballs). Place them on the prepared baking sheet.
  4. Heat the olive oil in a large skillet over medium-high heat. Working in batches, sear the meatballs for 2-3 minutes per side until golden brown.
  5. Transfer the seared meatballs back to the baking sheet and bake for 10-12 minutes, until cooked through (internal temperature reaches 165°F).
  6. While the meatballs bake, toss the broccoli florets with olive oil and salt. Spread on a separate baking sheet and roast alongside the meatballs for the last 10 minutes.
  7. Warm the marinara sauce in a small saucepan over low heat or in the microwave.
  8. Assemble the bowls: Divide the cooked quinoa among meal prep containers. Top with 4-5 meatballs per bowl, roasted broccoli, cherry tomatoes, and a drizzle of warm marinara. Garnish with fresh basil if desired.

Notes
