Healthy Turkey White Bean Chili – Easy 30-Minute Meal

A quick and satisfying turkey white bean chili that delivers deep, slow-simmered flavor in just 30 minutes. Made with simple ingredients, this light yet hearty chili is perfect for weeknight dinners and meal prep.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (93/7)
  • 2 tablespoons tomato paste
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cans (15 ounces each) cannellini beans or great northern beans, drained and rinsed
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 3 cups low-sodium chicken broth
  • 1 medium zucchini, diced (optional)
  • Juice of ½ lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 4-5 minutes until translucent and starting to brown.
  2. Add the garlic and cook for 30 seconds until fragrant.
  3. Add the ground turkey and break it up with a spoon. Cook for 5-6 minutes until no longer pink, letting it sit for a minute between stirs to get some color.
  4. Add the tomato paste and all spices (cumin, oregano, smoked paprika, chili powder, salt, and pepper). Stir and cook for 2 minutes to bloom the spices.
  5. Pour in the chicken broth and scrape the bottom of the pot with a wooden spoon to release any browned bits (deglazing).
  6. Add the fire-roasted tomatoes (with their juices) and the rinsed white beans. If using zucchini, add it now. Stir everything together.
  7. Bring the chili to a boil, then reduce heat to low and simmer uncovered for 15-20 minutes until the broth reduces and thickens.
  8. Remove from heat and stir in the lime juice. Taste and adjust salt as needed.
  9. Ladle into bowls and top with fresh cilantro, Greek yogurt or sour cream, and diced avocado if desired.

Notes

For best flavor, let the spices bloom in the oil and tomato paste before adding liquid. The chili will look thin initially but will thicken as it simmers. For a vegetarian version, skip the turkey and add an extra can of beans plus a diced bell pepper. Leftovers keep in the refrigerator for up to 5 days and freeze well for up to 3 months.
