Ingredients

  • Whole milk โ€“ ยฝ cup (120ml), for tender crumb
  • Unsalted butter โ€“ ยฝ cup (115g), melted and slightly cooled
  • Vanilla extract โ€“ 1 teaspoon
  • Evaporated milk โ€“ 1 cup (240ml)
  • Sweetened condensed milk โ€“ 1 cup (240ml)
  • Whole milk โ€“ ยฝ cup (120ml)
  • Cinnamon stick โ€“ 1 (optional)
  • Unsalted butter โ€“ ยฝ cup (115g), softened (for frosting)
  • Powdered sugar โ€“ 2 cups (240g), sifted
  • Ground cinnamon โ€“ 1 teaspoon (for frosting)
  • Heavy cream โ€“ 2 tablespoons (30ml)
  • Pure vanilla extract โ€“ ยฝ teaspoon (for frosting)
  • Granulated sugar โ€“ ยผ cup (50g) (for topping)
  • Ground cinnamon โ€“ 1 tablespoon (for topping)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line your muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs lightly, then add the whole milk, melted butter, and vanilla extract. Whisk until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold them together with a spatula. Stop as soon as the batter looks uniform but still slightly lumpy.
