No-Bake Watermelon Icebox Cake

A refreshing no-bake summer dessert layering juicy watermelon slices with whipped cream and crunchy cookies, chilled to perfection for a light and delicious treat.

  • 4 cups watermelon, sliced into thin, even rounds or triangles (seedless if possible)
  • 2025 buttery shortbread or graham crackers (Walker’s Shortbread recommended)
  • 1 ½ cups heavy whipping cream (or full-fat coconut cream for dairy-free version)
  • 3 tablespoons powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Optional toppings: fresh mint leaves, toasted coconut flakes, fresh berries (strawberries or blueberries)

Instructions

  1. Slice about 4 cups of watermelon into thin, even rounds or triangles, roughly ¼-inch thick. Remove seeds if any remain.
  2. In a chilled mixing bowl, whip 1 ½ cups heavy whipping cream with 3 tablespoons powdered sugar and 1 teaspoon vanilla extract until soft peaks form (3-5 minutes).
  3. In a 9×9-inch dish, spread a thin layer of whipped cream on the bottom. Place a single layer of cookies on top, fitting them snugly.
  4. Add a layer of watermelon slices covering the cookies, then spread whipped cream evenly over the watermelon.
  5. Repeat layering cookies, watermelon, and whipped cream until ingredients are used, finishing with a thick layer of whipped cream.
  6. Cover the dish tightly with plastic wrap or a lid and refrigerate for at least 4 hours, ideally overnight, to soften the cookies and meld flavors.
  7. Before serving, garnish with fresh mint leaves, toasted coconut flakes, or fresh berries if desired. Cut into squares and serve chilled.

Notes

Use a serrated knife for easier watermelon slicing. Pat watermelon slices dry if very juicy to prevent sogginess. Whip cream to soft peaks to avoid grainy texture. Chill at least 4 hours but not more than 8 hours for best texture. For dairy-free, substitute heavy cream with chilled coconut cream and powdered sugar with maple syrup or powdered coconut sugar.
